The Colombian coffee

Snow Queen Coffee

Origin: Colombia

Subregion: Huila

Process: Washed

Growing Altitude: 1500m - 2000m

Dulima was created in 2009 to capture the quintessential coffee profile of the central and south Huila region. Throughout the volcanoes and mountains of Huila outstanding coffees are grown. They carefully select lots through a rigorous sensory analysis at origin to guarantee profile consistency and quality from lot to lot. 

Dulima was inspired by indigenous groups from the southern region of Colombia, namely the The Pijaos people of the region around the Tolima volcano, natives long before the Spanish arrived, who called the volcano “Dulima,” meaning Snow Queen. 

The Ethiopian coffee

Origin: Ethiopia

Subregion: Yirgacheffe

Process: Washed

Growing Altitude: 1900m - 2000m

This fully washed coffee is from Birhanu Tebeko and Neja Fadil washing stations in Yirgacheffe district. The small holder farmers supplying this washing station cultivate mixed heirloom varieties at altitudes ranigng between 1,900 and 2,000masl.

The region

Over a number of years the Yirgacheffe region has developed a distinguished reputation for fine coffees, producing some of the most sought-after microlots in world. The combination of high altitude (up to 2,200m in some areas), fertile soil, consistent and plentiful rains, and an abundance of local knowledge are all contributing factors to the high status of Yirgacheffe coffees. The indigenous ‘heirloom’ varietals - which grow wild in Ethiopia - are responsible for the unique flavour notes which make for an unusual but refined cup. Typical profiles include citrus fruits, apricot, and floral/herbal notes of hops, jasmine or hibiscus.

How to make guidelines (adjust to taste)

Beans

Grind to required size.

Filter

Use 60-70g of ground coffee per litre of water dependent on desired brew strength.

Cafetiere

Use 14g of coffee per 220ml of water (not boiling), blossom for 4 minutes, plunge and enjoy.

Espresso machine

Refer to manufacturer’s instructions for machine use.
