Espresso Martini Cake Recipe

    Thank You Penny Zako! A Perfect One for Mother’s Day!

    Penny Zako is a worldwide AGA brand ambassador, and when our paths crossed thanks to AGA North Wales, we were more than happy to send her some of our coffee. Have you seen Penny’s socials?? What she creates is amazing! Using our coffee, Penny made the Espresso Martini cake which is perfect for Mother’s day, and she kindly agreed to let us share it here:

    “When I received some ‘party all night’ coffee from Gemma & Laura the dynamic duo @tiredmumscoffee I related instantly to the message behind their product and even though my children are now adults, being a parent and giving both moral guidance and practical support never ends 😍

    With a percentage of the profits going back to those directly supporting mums and their coffee being fair trade, I decided to create this delicious ‘Expresso Martini’ cake to celebrate motherhood!

    Why not have a go at making it for all those wonderful mums out there this Mothers Day! 🥰

    Here’s the recipe;

    Combine the following ingredients in a bowl and beat to a smooth batter:

    225g butter
    125g caster sugar
    100g light brown sugar
    200g self raising flour
    25g cocoa
    1 tsp. baking powder
    100ml brewed coffee @tiredmumscoffee
    (Expresso)
    50ml coffee liqueur

    Divide between 2 greased sandwich tins and bake in a moderate oven for 18-20 minutes until browned and risen.

    Allow to cool slightly and then turn out onto a rack.

    Make a sugar syrup by combining:

    25ml brewed coffee
    100ml coffee liqueur
    50ml sugar syrup
    50ml vodka @blackcowvodka

    Bring all the ingredients to a boil in a pan and allow to boil for 2-3 minutes then remove from the heat and cool

    Once cooled spoon over the flat side of each of the sponges.

    Sandwich the cakes together with a coffee flavoured cream made from 60g butter, 125g icing sugar, 400g mascarpone and 25ml brewed coffee. Save a 1/3rd to decorate the top and then garnish with drizzled dark chocolate and cocoa powder.”
